Ambrosia Fruit Cake


Ambrosia : (from dictionary.com)
1.the food of the gods.
2. something especially delicious to taste or smell.
3. a fruit dessert made of oranges and shredded coconut and sometimes pineapple.


I was in a mood today. I thought it was a cake mood. Nope, not it. but I made this little gem. This of course if another one of Grandma's recipes, she never fails :) 
There was no recipe for icing or glaze with it, so I decided to browse through Pinterest a bit and came across this, Lemon Icing Glaze over at The Kitchen Magpie. Yummy!

Try them both you'll like it.

I did make one substitution, but only because once I had everything out and ready to go I didn't want to stop and go to the store. I didn't have any all purpose flour, so I used whole wheat flour. I don't know if it really changed the taste that much because I have never made this before today. But still Yummy!


Ambrosia Fruit Cake

3 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
2 cups sugar
1 teaspoon salt
1 cup oil
2 teaspoons vanilla
3 eggs
1 – 8oz pineapple with juice

Any to equal 4 cups:
Fresh fruit
1 cup nuts
1 cup coconut
2 cups chopped banana

Grease tube or bunt pan. Bake at 350 for 1 hour 30 minutes. Cool before removing from pan

Custard Pie

So a friend called and asked if I could help make desserts for a fund raising benefit. I of course, said I would. This gives me a chance to make another of grandma's recipes.



Custard pie

  • 9 inch pie crust
  • 4 eggs
  • 2/3 cup sugar
  • 1/4 teaspoon salt
  • 2-2/3 cups milk
  • 1 teaspoon vanilla 


Mix all ingredients together and pour I to pie crust. Bake at 350 for 45 minutes to one hour. Custard is done when a knife inserted comes out clean.

Bobby Flay, I am not

So, I have the Food Network Magazine, The Chocolate Issue, March 2012. Inside on page 124 is a recipe for Bobby Flay's Peanut Butter Cream - Filled Devil's Food Cupcakes
Well I have created a major fail. They tasted really good, but looks like they were made while I was blindfolded. But I tried! Bobby Flay, it's safe to say, you have no competition here.

Addendum: So, my friend Heather, who helped make this mess posted this photo to Bobby Flay's Facebook page... He replied back!!!

  • Bobby Flay wow...not pretty! you didnt' let the ganache thicken enough and did you dunk the cupcakes while still hot? as you will note by the comments on foodnetwork.com the recipe does work...Sorry.....If it makes you feel any better...my baked goods don't always look so pretty either...

Grama's Cookies




Ok, so I am kinda new to the blogging scene. I toodle around on Pinterest and view and repin great recipes that I would like to try and read through everyone's stories then find the recipe at the bottom or squeezed somewhere in the middle. Don't get me wrong, I enjoy everyone's stories. I am just not a writer or story teller. My life is kinda of boring. But I can add a few quips here and there about what I am post photos of or from where I got the recipe. Most of the recipes I am going to start out with were in a notebook that was my grandmother's. Some of these may have come from cookbooks, magazines, or the backs of boxes, I'm not sure, otherwise I would give credit where credit is due. The woman obviously liked sugar and anything with the ability to clog your arteries :) but they taste so good. 

So here goes, these are grama's chocolate chip cookies.

(oh, and like with most all of her recipes... there are no instructions, or not many anyway)

Chocolate Chip Cookies

Mix
2/3 cup butter
2/3 cup shortening
1 cup sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla


Add
3 cups flour
1 teaspoon soda
1 teaspoon salt
1 cup nuts
2 packages (6oz each) chocolate chips


Bake at 375 for 8-10 minutes

Of course you can get a little wild and crazy and switch out the chocolate chip with other flavors.
My favorite is Nestle Tollhouse Peanut Butter & Milk Chocolate Chips.
